 I am really enjoying experimenting and making new recipes to see how they go.  Tonight I made three.  We were grilling out and I wanted to take advantage of the grill.  I have wrapped up the meals for the next couple of days.

Mmm... Sooo good! I usually make my chicken or shrimp kabobs in my foreman grill or tilapia in aluminum foil with the same veggies as the kabobs like bell pepper, onion, squash, mushroom s, So easy and quick Those zucchini boats look awesome do you mind sharing the recipe? Great job on experimenting. Everything looks delish!

 I used the rest of my veggies to make chicken soup - I always have some in the freezer.  I use Elina's base recipe and then mix different things in.  And always add Unjury Chicken Soup Protein after heating up lol.  

Here's zucchini boat recipe:
2 small zucchini
2 strips bacon (cooked and crumbled)
1/3 roma tomato (or whatever kind you like) diced
1 tbsp chopped onion - smallllll diced pieces
1/4 cup shredded cheese (i used 1/8 each mozzarella & med. cheddar)
garlic, basil, salt, pepper

Cut stem ends off zucchini.  Slice each in half lengthwise.  Brush lightly with olive oil - or use nonstick spray, works just as well.  Grill for about 7-8 minutes.  Flip midway through.  Afer grilling, use a spoon to core out the center, but just the center - leave a lot around the edge.  I didn't discard center - I chopped up and saved.  It just depends on each one's taste.  
In a bowl, add chopped zucchini core, chopped bacon, onion, tomato, cheese and spices.  Mix well.  Take mixture and top the zucchini boats with it.  Here you can eat right away, or store.  To reheat later, heat oven to 250* and place on cookie sheet.  Heat for about 5 minutes - but make sure to check on them often - you don't want them to get overcooked or soggy.  When shredded cheese gets melty, you are way done ;)

 I love seeing pictures of how other people are preparing their food.  Everything you posted looks fantastic!  It's so great for newbies and pre-surgery folks to see that we can still be creative and healthy in our cooking :)
