Eggs are more than just a breakfast food! As holiday celebrations wind down we wanted to share some of our favorite recipes to make use of leftover hard boiled eggs.

Delicious and protein packed recipes perfect for lunch or dinner

Avocado Egg Salad (from The Daily Meal) - This Avocado Egg Salad recipe is creamy, crunchy and full of color and great taste. It’s the perfect solution for leftover hard boiled eggs, or the perfect option for a great sandwich!

Shelly's Bacon & Egg Salad (from The World According To Eggface) - This is a great use for some of those colored Easter Eggs. Perfect weight loss surgery friendly appetizer, snack or lunch. A large egg provides 6 grams of protein.

Kicked Up Eggs (from Kosher Bariatric) - Horseradish and eggs are both standard food for Passover.  And eggs are a great source of protein for post-bariatric patients!

Nik's Angelic Eggs (from Bariatric Foodie) - Get more protein into that egg! So again I ask…what came first, the chicken or the egg? I still don’t care and I don’t have to choose with this protein packed little gem!

Old School Meatloaf (from Everyday Maven) - Paleo Meatloaf Recipe that combines both lean ground beef and ground pork with herbs, spices, egg and some almond meal to bind it together. If you don’t eat pork, you could use dark meat chicken or turkey. Whatever you do, don’t skip the hard-boiled eggs. They are the best part!
