
Sweet and Savory Hawaiian Chicken Kabobs
June 27, 2025These Hawaiian Chicken Kabobs with chicken breast and pineapple are served in a sweet and savory brown sugar and soy sauce marinade. Easy to make, healthy, and full of flavor.
I'm so excited to be able to turn some attention toward summer recipes. We're about a month into spring now (as I write this) and despite the fact that the weather still fluctuates and sometimes I still think I might need a jacket, I'm going to go ahead and move full-steam ahead into all the warm-weather everything.
That brings me to this fun summer grilling recipe. Can you think of a term that conjures up "summer" more so than anything dubbed "Hawaiian"? Didn't think so. Also, I think when you read that something is Hawaiian, you already know what's going to be in it. A bit of sweet (by way of pineapple and brown sugar of course), a little bit of savory (thank you soy sauce and sesame oil), a hint of tart (mmmmm vinegar), and some tang and spice (courtesy of the ginger).
Hawaiian Chicken Kabobs

Prep Time: 10 minutes; Cook Time: 15 minutes; Total Time: 15 minutes
Makes 4 servings
Ingredients
- 1.33 lbs boneless skinless chicken breast, cut into chunks
- 1/4 cup pineapple juice
- 3 tbsp soy sauce
- 3 tbsp brown sugar
- 2 tbsp rice vinegar
- 3 tsp sesame oil
- 1 tbsp fresh ginger, minced or grated
- 2 cups pineapple, cut into chunks
- 1 green pepper, chopped
- 1 red pepper, chopped
- 8 oz mushrooms
- 1 red onion, chopped
Directions
- In a small bowl mix together the soy sauce, pineapple juice, brown sugar, rice vinegar, sesame oil, garlic, and ginger.
- Add the chicken, pineapple, pepper, onion, and mushrooms. Marinate for 2 hours.
- When ready cook heat the grill over medium heat. Skewer the chicken and vegetables. I was able to make 8 kabobs. Cook for 15-20 minutes until chicken is cooked through.
