
Texas Caviar Recipe
August 14, 2015Give this recipe a try... fresh, zesty and YUMMY! This Texas Caviar recipe is a true crowd pleaser, bring this colorful dish to a potluck or serve at your next get-together. To save time and let the flavors meld together, you can make it the night before serving. It tastes even better the next day!
(makes 8 cups, serves 32)
INGREDIENTS
1/2 onion, chopped
1 green bell pepper, chopped
1 bunch green onions, chopped
2 jalapeno peppers, chopped
1 tablespoon minced garlic
1 pint cherry tomatoes, quartered
1 (8 ounce) bottle zesty Italian dressing
1 (15 ounce) can black beans, drained
1 (15 ounce) can black-eyed peas, drained
1/2 teaspoon ground coriander
1 bunch chopped fresh cilantro
DIRECTIONS
1. In a large bow, mix together the green onion, green bell pepper, green onions, jalapeno peppers, garlic, cherry tomatoes and Italian dressing, black beans, black-eyed peas and coriander.
2. Cover and chill in the refrigerator approximately 2 hours.
3. Toss with desired amount of fresh cilantro to serve. Enjoy this Texas Caviar recipe as a side salad or a dip!
