hmmmm. I've got some japanese eggplant in the garden, tomatoes, and some basil....I'm thinking that I've got a great idea for tomorrow night's dinner -- thanks Frisco !!!

Looks so yummy, I actually thought that the eggplant were portabello mushrooms instead, I would LOVE to make a portabello bariatric lasagna, yum!

This works with zuccini sliced thin length-wise and grilled or pan seared. And you can make it in a square pan like traditional lasagne or roll up the zuccini around some ricotta.  But this looks spectacular!  Diane

 The beautiful thing about that, is I have everything in my garden except the meat (even have my own homemade cheese!). My kids would love this, I am going to have to try it for them. 

What kind of ground meat did you use? It looks like turkey, but I thought I would ask!

Ground Chicken......... breast and leg mix.

I like ground chicken way better than ground turkey.....
