Mini Meat Loaf

 

Here’s an ad hoc recipe that I thought I would share. I did a version of my grandmother’s meatloaf but this recipe is according to taste so feel free to make it yours, add any spices you like or veggies you like in your meat loaf.

 

The measurements I have included are very rough estimates because I cook with love!


Ingredients:

·         ½ lb Lean Ground Turkey

·         ¼ Green Pepper

·         ¼ Onion

·         2 tsp Garlic

·         ½ tsp Salt & Pepper

·         ½ Beaten egg

·         1tbsp Oatmeal

Meatloaf Sauce:

·         2tbsp Low Sodium Ketchup

·         1tbsp Mustard

·         2pkts Splenda


Mix all Meatloaf Sauce items in a bowl and set aside for later.

 

I simply mixed all the ingredients in bowl and made into 2oz meat and placed into a muffin pan and it made 4 minis loafs. Bake on 350 for 30 minutes, top with the sauce and bake an additional 15 minutes. Let sit for 5 minutes then serve and enjoy!

Looks YUMMY! I did something similar only I put the meatloaf in a muffin pan and it cooked really well. Made a half dozen small loafs like this but froze most of them that I can take to work for lunch.

Another thing you might enjoy if you aren't much of a cook and have a Trader Joe's nearby is their wonderful turkey meatloaf muffins.  These are layered with parmesan mashed potatoes and spinach.

There are 4 muffins at 4 oz. each.

calories: 220
total fat: 13g
saturated fat: 6g
cholesterol: 80mg
sodium: 490mg
total carb: 12g
dietary fiber: 1g
sugars: 3g
protein: 13g

I realize it isn't an ideal on sodium but not too bad if you watch the rest of your day.  Same can be said for the fat.  Watch the rest of your day on these values and enjoy.

I had one tonight and it is very tasty and very satisfying.  Tons of good flavors.  The best thing is they are pre-portioned and the preferred method for cooking is about 2 minutes in the microwave.
