ok it is just me in the house. so how do i make a meal with out having tuns left over. how do you down size a recipe?

Muffin tins are your friends! I bake lasagna (using thin sliced zucchini as noodles), meatloaf, and quiches in muffin tins and freeze the leftovers for later.

Another great investment is a vacuum sealer. My parents bought me a Foodsaver last Christmas, so now when I buy chicken breasts or pieces of meat I can vacuum seal them in individual portions. I usually put some seasonings in the bag with them, label and freeze. Then I can just pick out the one I'm in the mood for (a package might say "4 oz. chicken breast with Italian seasoning") and thaw it out.

Okay, you're a DSer, and you're about 6 weeks post-op. Eat some cheese, a couple slices of deli meat, and a handful of nuts. Straight out of the fridge, and no left-overs. (Have some bacon for dessert. *grin*)
