chicken salad recipe

Hi - does any one have a good chicken salad recipe that you could provide that is low in calories and fat?

 I personally like curried chicken salad. I just cut up chicken, i like a mix of dark and light. Add A bit of hellmans  mayo and couple of tbsp curried powder, or to taste. Cut up and mix in some apple chunks and grapes...delish!!

I know that you asked for a specific recipe but what I do when I am looking for a recipe is that I go to cooks.com or allrecipes.com, food network or just plain Google it and I find a lot of info. Cooks.com (into their search box) and bettycrocker.com you can put ingredients into the search engine and come up with recipes.

fresh chopped dill weed
mix of 1/2 greek yogurt 1/2 light mayo
Salt and pepper

 Warm Turkey salad with avocado and lime dressing

2 tbsp olive oil
350g turkey escalopes, cut into thin strips
1 medium onion, finely sliced
1 teaspoon grated lime zest
2 Little Gem lettuces
175g cherry tomatoes, halved
1 small yellow pepper, deseeded and cut into strips
salt and black pepper
coriander leaves to garnish
FOR DRESSING:
1 ripe avocado
150ml fromage frais
juice of 1 lime
2 tbsp chopped coriander
a dash of tobacco or chilli sauce to taste


1. Heat the oil in a large frying pan. Add the turkey and onion. Stir fry for 10 minutes until the turkey is golden brown and tender and onions become soft.
2. Sprinkle ont the lime zest. Season with black pepper and a little salt
3. Make a dressing. Place all the ingredients in a blender or food processor and puree until smooth. Season to taste.
4. Arrange the outer leaves of the lettuce on four plates. Scatter on the halved tomatoes and yellow pepper strips. Arrange some of the warm turkey and onions in the center of each plate and spoon over some avocado dressing. Sprinkle with coriander leaves.
5. Serve with plenty of fresh crusty granary or wholemeal bread.

I have a fantastic recipe for Chicken/black bean salad but I don't do low fat, I do low white carb so you probably wouldn't be interested.

We need fat in our diets to burn fat, we don't need white carbs, at all - ever.
