Thai food is my favorite! DH & I had our first chicken skewers with the Thai hot peanut sauce at the (of all places, Canada!) Vancouver BC world's fair in the 80s...and all he did, after that gustatory experience, was make sure we went to that pavilion daily for those again.

I learned to make the adapted hot "almond" dipping sauce (a low carb version) by the 'quart', it lasts ~2+ weeks in the fridge, and you can pour it over steamed veggies TOO, (and pork, etc). so those on a lesser 'meat protein' diet can have it often, and this reminds me of that

A friend of mine introduced me to the 'lazy-salad' just taking huge Romaine leaf, and dip them, by hand, into a mayo/spciy sauce on a plate, and eat. Loved the simplicity.

Combining both with this recipe is on my menu by Friday! Thanks!
