Looks like I've figured it out!
Well I'm 99.99% convinced at this point that I'm truly dealing with hypoglycemia. One of my diabetic students gave me an old glycometer and I've been checking my sugar when I feel dizzy and not so great and it's tended to be around the high 60's/low 70's. Not terrible but on the low side -- well, I've had two pretty bad runs where I've checked and been at 51. My fiancee's mother suggested glycogen tablets and they've worked great every time I've been feeling in the dumps. So, lot's of investigating to figure out it's something fairly simple to work with and control.
I'll still do a sugar test one of these days that I've got a couple hours to spare (hmm, not sure when that'll be!) to get a final diagnosis but I'm satisfied that I've got the answer I was searching for.
Now I got to get back to religious training for this Ironman race, 70% excited and 30% scared sh$tless :) It's gonna be an epic experience!!!!

That's great news.
Make sure you talk with your doc about the blood sugar. We just had a WLS surgeon speak at our support group and he was asked about this. He indicated that taking sugar, which is what a "normal" diabetic or hypoglycemic would do in that situation is not the thing to do for WLS patients, he said it can start the whole cycle over again. He said that the body can then dump fluid and sugar and then insulin etc etc etc in a viscious cycle. He recommended perhaps a small amount of sugar, but recommended proteins and a small quantity of healthy fat as the solution. Not so much sugar that you spike the other direction and trigger the cycyle again and then the other food sources to keep you steady.
