A recipe and a question!

I wanted to share this since I know it's typical for lap band patients to have problems w/ white flour. I have almost no tolerance for white flour products, so I've adapted a banana nut muffin/bread recipe w/ wheat flour and it goes down fine now.
Ingredients:
3-4 bananas
1/3 cup melted sugar

1 cup sugar
1 egg
1 tsp vanilla
1 tsp baking soda
1 tsp salt
1 1/2 cups flour
1. mash bananas add everything but flour
2. add flour
3. add how many chopped nuts you want
i put muffins in a 6 muffin tin with big cupcake liners
i pam the bread tin
4. it says 350 for 1 hr. muffins in my oven go for about 40 mins bread goes longer. also i sprinkle sugar on top of the muffins and bread
longer bananas sit the better
My bread went for about an hour and 10-15 minutes, you just have to stick a knife/toothpick in it to check it after 40-60 minutes.

Now for my question
, what's the best fake sugar to try and experiment w/ w/ this recipe so that my mom an enjoy it after her revision to gastric bypass, since I know she can't have real sugar. She really enjoyed this recipe when I made it for her and I want to make it again for her in the future, but I want her to be able to have it.
