Thought this would be really cool.  I have had Chinese lettuce wraps, but how about taco lettuce wraps.   You peel a whole lettuce leaf at a time, rinse and dry, then make a taco in it, like you would a soft taco. (meat, beans, cheese, sour cream/greek yogurt, salsa, etc).  Instead of lettuce on your taco, you can have taco in your lettuce.

Egg Drop Soup

Egg Drop SoupMakes 1 serving
.
1 1/2 cups chicken broth or
1 1/2 cups water +
2 teaspoons (cubes) powdered chicken broth
1 medium egg
1 oz extra lean sandwich ham, minced
1 teaspoon light soy sauce
1 teaspoon celery, minced
1 teaspoon green onion, minced
garlic powder, pepper & salt to taste
splash Tabasco sauce

Add chicken broth (or 1 cup water and and powdered chicken broth) to a medium saucepan. Add soy sauce, ham & veggies and heat to simmer. Stir well and cook on high for 1 minute.

In a small bowl beat an egg. Stirring broth in one direction with a fork slowly pour in egg. Ribbons will form and soup is done! Easy peasy for a quick high protein snack.

Note: You can use Eggbeaters  for convenience and less fat calories.

If you like the mexican flavor try substituting Red Enchilada Sauce instead of diced tomatoes.  If you have a Safeway or Genuardi's in your area they carry a 28oz. can made with red chiles instead of tomatoes.  It is delicious and doesn't have the sugars that tomatoes have.
