This sounds yummy...What section of the grocery store can I find this Quinoa? I have been so hungry for rice but it makes me so sick...Does this Quinoa stuff swell up like rice does?

I had a few that I hadn't frosted yet...I put what was left over in the microwave for 15 seconds and added just a touch of milk to thin it a bit and what a difference that made...the frosting was so much better!

I am 4 weeks post op RNY today. I Iove chia seeds, and I used to make puddings with them. I am so tired of the sugar free puddings!
Here are two different ways of making a chia seed pudding I thought I would share. I have found so many great recipes on this site .
One turns out like a rice/ tapioca texture, the other smooth. I eyeball things, so measurements are approximate. It will make way more than you can eat at one time by the way. It keeps in fridge well.
I would imagine these are good for hydration too :)
Blueberry ( or insert other fruit here) smooth chia seed pudding:
First make a chia gel by mixing 5 or 6 Tbls of chia seed with about 2 cups of room temp water and let sit for at least 15 minutes till gel consistency. They will soak up the water. Then make the rest:
1/2 C. chia gel
1/2 C. frozen blueberries
stevia to taste ( flavored stevia like vanilla is good in this)
Blend till smooth.
I add a tsp of spirlunia sometimes too.

Chia seed ' tapioca' pudding:
soak about 5 Tbsp chia seed in about 2 cups fortified almond or soy milk overnight , in fridge.
next morning stir it and....
add some stevia to taste, and, depending on your stage, stir ins of your choice: fruit, pumpkin, nuts, Cinnamon, unsweetened coco powder ect... : )
You could use Truvia too, looks good gonna try it.

I'm not even sure how to describe the texture....they were moist...but sort of grainy...and you have to cook them longer than the recipe calls for or they are still REALLY runny

Oh bummer. Were they like a moist fudgy texture? That's how I have them envisioned anyway? Not good huh? Thanks for being brave enough to make them and report back.

I made the Pilbury sugar free chocolate cake mix and frosting last night. I used applesauce istead of oil to lower the fat and calories. It was actually very good.. It doesn't taste 100% like the regular ones but it's a nice substitute. I am going to try the vanilla ones next and use different flavors to flavor up the frosting...I am excited to try the next ones.

Cabbage Casserole
1 lb of ground beef
1/2 head of cabbage chopped
1 tbp spray butter
1 can diced tomatoes
1 can rotel diced tomatoes
mozarella cheese
1 cup quinoa
1 can beef or chicken broth low sodium..
preheat overn to 350 deg
put 1 cup quinoa in a sauce pan..add the broth and boil...let simmer for 10 - 15 mins (as directed on box)
Brown the ground beef..in a separate pan, add chopped cabbage with the spray butter..cover and let it coo****il wilted...drain the gound beef and add to the cabbage pan...add both cans of tomatoes and the quinoa...cook for 2 mins until all the flavors have combined...
put the mixture in a baking dish..top with cheese and bake for 20 mins...everything is cooked so you are really just letting the flavors fully combine and letting the cheese melt..
My family loves it..I add the rotel because my husband and son like a lil heat...but if you don't like spice at all then just two cans of the tomates will also work....the quinoa is not low carb but it's lower than rice and I can't eat a whole lot of it at one time.

I make my protein shakes in the blender with milk and I also add in stuff such as fruit, peanut butter, sugar free jellies/jams, sf jell-o pudding (helps to thicken the shake into a milkshake consistency,) sf syrups etc. Maybe try adding in some fruit or peanut butter to your shakes? I know that when I add PB I feel a little bit more full. I've also heard of people adding in some fiber to their shakes and that helps fill them up but I've never tried that myself so I'm not sure if it works or not.
