I made this last night for my family and it was a huge hit..
1 cup quinoa
2 cups low sodium chicken broth
1/4 cup frozen peas
1/4 cup frozen corn
1 tsp soy sauce
1/4 cup green onions
2 eggs (I used egg beaters)
1 tsp soy sauce
1 tsp ketchup
1 tsp mustard
add quinoa and broth to sauce pan...bring to a boil..reduce temp to low, cover and let simmer 10 mins...fluff quinoa with a fork..add peas, corn, soy sauce, and green onions....scramble eggs in a separate pan....add eggs to quinoa mixture...mix 1 tsp soy sauce, ketchup and mustard together and then add to quinoa mixture...serve hot..it's delish!

This is the 3rd time I've heard about egg rolls today ... now I'm craving an egg roll wicked bad! LOL
In the grocery store, in the refridgerated section, there are really yummy egg rolls! They are made by Chung's and come in a bunch of varities. This chicken egg roll has only4 grams fat, 7 grams protein and 5 grams sugar. Its also 150 calories for the whole roll. Serving size is 1 roll. It takes about 10 minutes to cook in the oven - nice and crispy!! Its weird b/c the vegetarian egg roll has more fat, who would of thought! Check out their website too:

Another easy one is: an angel food cake mix (dry) mixed with a can of crushed pineapple with the liquid. Yep, just those two ingredients. Bake in a 9x13 pan at 350' . Serve with cool whip and fresh fruit...sliced strawberries, blueberries, raspberries or pineapple chunks....whatever you like.
