Sugar free hot cocoa with peppermint SF syrup and Chai tea with skim milk and SF vanilla syrup.  My hubby uses them for coffee, but I don't drink coffee.  Last year I found SF candy canes and stocked up by buying 4 boxes (40 canes total).  I limit myself to one or two a week with my hot cocoa - it gets me in the mood for the holidays!

I used the Packet of beef stew seasoning, used beef stock instead of water, added peas, corns and string beans only and used stew beef and cut it very small. Cooked it in the crockpot and it was very good!

If anyone has a good recipe for beef stew or chicken stew I would love to have it. With the cool weather soups & stews sounds sooo good I want to make a big pot. With today being Halloween it sounds even better it means fall is here & winter is around the corner.  Thanks, Have a Happy Halloween

Pillsbury has sugar free brownies & cake mixes (yellow & choc), all tasty & not dry like some diet stuff can be. I found a recipe for pumpkin cookies -1 box yellow cake mix 1 can 15 oz pumpkin  2 tablespoons pumpkin pie spice, I added a  bit of splenda brown sugar (no eggs, water or oil) mix then drop by spoon onto baking sheet or parchment paper bake at 350 for about 16-18 minutes and you get big fluffy cookies but they are kinda ugly and you could easily add protein, choc chips or nuts. I can eat about 1.5 coz they're kind of big but it takes care of a crave and everyone likes them. My first attempt I made mix as directed & added the other stuff-they come out flatter & sorta chewy-but everyone liked them too!

Also keep in mind that there are different textures of tofu.  The softer kind can be used to blend in shakes or dips.  The firm/extra firm cuts up nice and can be used like meat.  Tofu doesn't have much of a taste but absorbs a lot of flavor from what it's mixed with.

I just made a batch of this using the recipe on the back of the McCormick's White Bean Chicken Chili seasoning, replacing the cup of water with cup of chicken broth and added a can of no salt added diced tomatoes.  It tastes fantastic and has great nutrition!



White Bean Chicken Chili with Tomatoes Recipe

Makes 10 servings

White Bean chicken chili with diced tomatoes

Ingredients
19 oz chicken breast tenders
15 oz white beans
1 cup chicken stock
15 oz diced tomatoe
1 package white chicken chili seasoning
Directions
  1. Cut chicken tenders into small bite size pieces
     
  2. saute chicken in olive oil until no longer pink
     
  3. Add beans, stock, can of diced tomatoes and seasoning.
     
  4. Let simmer
