I'm originally from the South and love Fried apples but they're loaded with sugar. What I do with apples gives you a similar taste though and it's SOOO easy...
Peel and slice the apples (I slice them into about 1/3" slices lengthwise, put them in a microwaveable casserole dish with a lid, add cinnamon and artificial sweetner to taste (I just use about 1/2 pack of sweet & low), cover the dish and microwave for about 4-5 mins depending on the amount and how mushy/crispy you want your apples -- this makes a cinnamony, apple syrup like coating and they are delish. This would probably work to make apple pie filling but I'm not that adventuresome.
Apples are also good peeled, sliced and cooked with a pork loin roast.

Almonds!!! Yummm! (Especially the smokehouse variety)
If you can take a small cooler, I'd take some string cheese and sliced ham/turkey. They'd be easy to eat on the road.

Sugar-Free Sweetened Condensed Milk
1 (12 oz) can evaporated skim milk
1 1/2 c nonfat dry milk powder
1/2 c Splenda
In large bowl, combine all ingredients throroughly. Refrigerate. Will keep for up to one week. Yield: 3.5 cups.

I would start with what I call "The Beginning" and use Julia Child's recipe

A half recipe is often sufficient AND the "low carb" types could use an alternate flour (like almond) since the crepes don't need to rise.

You could keep things simple...tuna packets, nuts, veggies. Make some onion dip with Greek yogurt. Boil some eggs or make a chicken salad and use a cooler. Take some string cheese. If staying overnight then maybe find a grocery store when you stop.

Hey guys! First let me say that the recipes on this site are awesome (I have tried many and EVERYONE should try the noodleless lasagna!) So thanks for posting them!!!
Ok, on October 22 I am leaving for a week long trip to Florida (yay!) which is a 14 hour drive for me. My first problem is that on long trips I tend to snack in the car. Does anyone have any recipes that would keep in a car?
Also, I would prefer to not eat fast food unless I absolutely have to, so again, any ideas? I would just pack a huge salad and eat it twice but raw veggies don't like me anymore :(

If you use egg beaters with the oatmeal version I would suggest to add a little more .. mine came out wicked crumbly and a little too dry. I would do a little more egg beatrs myself :) Or maybe 2 eggs if you use real eggs :)
