Topic: Quick pot pie without crust

My wife made some turkey for Thanksgiving and  we had plenty of leftovers.

 

My wife decided to make a pot pie with the leftover turkey and threw some things together and it was delicious.  It made 3 days worth of meals and I loved every one of those meals.

 

I decided today to try it without pie crust to see if it would be as good.  It is fantastic so thought I'd share and see what you thought.

 

It takes about 6 minutes to put it all together and will last a few days.

 

 

Ingredients:

 

10 oz can of turkey (or same size chicken if you prefer)

 

10 oz bag of steamable frozen mixed vegetables (I use the Birdseye)

 

1 can of cream of chicken soup

 

1 cup of shredded cheese

 

 

Put the mixed vegetables in the microwave to steam according to package instructions

 

Drain the canned turkey and mix with all the other ingredients in a bowl, mix well

 

Add the mixed vegetables after they complete microwaving and have set the suggested 1 minute.

 

Mix again

 

 

Take a portion to heat in microwave and refrigerate the rest for more meals.

I like things that can be made into multiple meals.   This can be used for three meals.

 

Large pork loin.  (I buy at Sams club, for 15 dollars I get enough to do this recipe twice.  split in half, freeze one half for another week)

Large container of salsa.

 

Place 3-4 lb loin in the crock pot.

Salt, pepper, garlic powder to taste.

Cover with salsa.  Cook for 6-8 hours on high, until the pork shreds.  Can even start with frozen meat, takes longer.

 

First day:

Serve shredded port with veggies, or over rice/noodles/quinoa.

 

Second day:

Make shreded pork tacos.

 

Third day:

remove salsa, shred remaining meat, and add BBQ - for pulled pork.

I have to add reduced fat cheddar cheese sticks by Sargento or pickles.  The pickles don't add anything in the way of protein but are low in calories and fat and so dang good.

Making this tonight after work!  Might add some scallions so it's got a wee bit of green.

I follow a ketogenic diet post-op. I also have a diagnosis of binge eating disorder. Feel free to ask me about either!

This meal is very low in carbs and healthy not to mention SATISFYING!!! 

 

We had this at applebees, but I made it at home. It is easy and so good!!

I use Syntrax chocolate truffle protein powder and add a packet of Swiss Miss light (used to be called diet) - it is only 25 calories. I mix both in about 4 oz. cold water first to dissolve and then add about 8 oz. of ho****er to that. For 125 calories I get a tasty 12 oz. of hot cocoa protein goodness!



5' 4" tall, HW: 242, SW:215.4 Weight Loss - pre-op: - 26.6, M1: -15.4, M2: -16, M3: -11.4, M4: -11.2, M5: -12.2, M6: -7.4, M7: -7.8, M8: -2.0 Goal of 130 lbs. reached at 8 months, 2 days post-op!

I thought I had posted this before, but I couldn't find it today, so I'm posting it again.  Please excuse if it is a duplicate.

Crustless Cheeseburger Quiche

Ingredients:

  • 1 lb ground beef

  • 1 -2 teaspoons onion powder

  • 1/2 cup half and half

  • 1 cup plain Greek yogurt

  • 4 eggs, beaten

  • Garlic powder, to taste

  • pepper

  • 1 cup shredded cheddar cheese

Directions:

  1. Brown ground beef and onion powder in a large skillet over medium heat, drain off fat.

  2. Mix together eggs, half and half, yogurt, garlic powder, pepper and shredded cheddar cheese.

  3. Put browned beef into a 9 inch pie plate, pour remaining ingredients over the beef.

  4. Place in a preheated 350 degree oven and bake for 40-45 minutes.
