Frisco-Chips for July 4th

Somebody not to long ago was asking about 4th of July foods......

I've made these a few times....easy, fast, tasty !!!!

This one is Chicken Salad on English Cucumber Chips.....

Works good also with:

- Egg Salad
- Tuna Salad
- Crab Salad
- Steak and Salsa

Could be Pimento.....or Tomato....or Roasted Red Bell Pepper from a jar....parsley....anything goes!!!

Looks very Scandinavian. They have the little bites of vegies and salads and treats on cucumber slices down pat. I love looking at photos of the deli fare in those long food cases in the stores over in Scandinavia. Thanx for the eye candy.

Frisco, I also use cucumber slices to hold all kinds of things: hummus, brie, smoked meats, pretty much anything a pita chip or cracker would be used for.
