I love to cook, and love to eat good food and always will. I'm an unrepentant foodie. I have made some shifts in what I eat on a regular basis, and one biggie was giving up most starches, most of the time. 

Something I see a lot of folks doing, especially early out- mashed potatoes.. Now, it's a given- early out, you won't get much of anything in.. but later, when you make something crying out for mashed potatoes.. try this instead:http://www.ibreatheimhungry.com/2012/01/better-than-potatoes -cheesy-cauliflower.html


I love her bog.. so much I got her cookbook. She cooks with real food for the most part, almond & coconut flours taking place of wheat flour. So far, I've enjoyed what I've made- and the bonus, low(er) carb and grain free!

I still change up things at times- and this one I steamed the florets plain in a uncovered bowl in the micro,  used 1T half & half (don't usually have cream on hand), 3T butter, and 3T cheese to a large head cauliflower. An immersion blender or food processor works great, if using a bullet, let the cauliflower cool down before whizzing it up- then reheat before adding the cheese and whatnot. I do lower carb, but am a big proponent of good fats.. and again, in a 2oz serving (tonight's side for me) equated to: 67cals, 3 carbs, 3 prot, 1 fiber and 5g fat. That next to my 2oz of pork chop with balsamic vinegar/ginger reduction added up to a whopping 175cal meal. 

This is seriously good, like it is, with some garlic... truffle oil drizzled on top- whatever you like to do to taters, do to this. If you have a potato craving, THIS will scratch it.. 

Next, I'm thinking of trying her brownies or cupcakes.

I also love to cook & had decided when I had surgery, if I was limiting the amount that the food I was going to eat would be good.

I love trying new recipes, thanks for sharing. Now I'm getting hungry, lol
