I love the idea of chicken with guacamole, salsa, etc. I have a terrible time cooking chicken without it drying out to much. Maybe I'll pick up a rotisserie chicken instead.

Its so easy to make. I get a chicken breast and slice it in half long ways and in a non stick skillet sprayed with pam I quickly cook it until its almost done then pour a can of rotel tomatoes (tomatoes with chilis) then slowly simmer it for about 20 minutes. It keeps the chicken moist. It also works well with skinless boneless chicken thighs.

No... tomorrow's May, more snow is just nuts in May in the northern hemisphere!!  I hope you get some nice weather soon - we're due some nice weather next week, yippee!! mail  We did have snow a few weeks back in the London area.

Low protein day today - I'm gonna try and buy some protein bars tomorrow to get my protein up.  Everywhere sells potato chips and chocolate but getting protein can be a bit of a mission.

Candy,

Believe it or not, I've never actually had cottage cheese. What does it taste like?

I have it so much that it IS hard to believe you have never tasted it lol

Very mild and soft, I get the small curd, 1% milkfat.  It can be made sweet or savory.  For sweet I add fruit and splenda and for a savory example- it is used in lasagna or my husband just eats it with pepper (I only like it with fruit)

I'll definitely have to try it with fruit. They sell it in very small containers here. What's to lose?
