Canadian Bacon Stacks Recipe, 95 Calories!

Canadian Bacon Stacks is a super-simple recipe idea that was requested by a friend who did not like eggs for breakfast! She needed a low-carb breakfast to help with rising blood sugars. This Canadian Bacon Stacks Recipe is a protein-packed and healthy fat breakfast that is filled with flavor.

Canadian Bacon Stacks Recipe

Serving Size: 1 stack
Prep Time: 15 minutes

Ingredients

  • 4 slices Canadian bacon
  • 2 tablespoons fresh, ripe avocado
  • 4 grape tomatoes
  • Lemon or lime zest
  • Sea salt

Preparation

  1. Preheat the oven to a high broil. On a baking sheet, make two stacks of two slices of Canadian bacon. Place those in the oven and broil only until the top is lightly browned and the edges start to curl, about 3-4 minutes.
  2. Remove from the oven and add small scoops of 1 tablespoon of avocado to each stack. Then top with tomato, a little zest, and a sprinkle of sea salt to make all those flavors come alive simply. Eat right away.
