Pumpkin Spice Power Bowl

Pumpkin Spice Power Bowl

December 3, 2021

Every fall, I get the urge to use pumpkin in every way I can think of. Typically we only think to use it in baked items, where it has to be cooked, but pure pumpkin does not need to be cooked! Use it in smoothies, parfaits, oats, etc. It is delicious in this Pumpkin Spice Power Bowl Recipe!

Thick, creamy vanilla Greek yogurt, such as Oikos Triple Zero – which I love because it is sweetened with Stevia, the herb that is sweet. Then stir in some pure pumpkin.

Add some toasted walnuts…high in plant-based Omega-3s, the healthy fat used in your brain, heart, and eyes, and they are so rich in flavor too. A sprinkle of pumpkin spice or cinnamon, and if needed, a drop of pure maple syrup…

So delicious! …and great with a morning hot cup of chai tea.
