Zucchini-Stuffed Hot Chicken Salad Recipe

I receive emails all the time from sweet people who are trying to eat well, but tired of the same “grilled chicken and broccoli” dinner, and begging me for more flavorful ideas (which, I absolutely love hearing from you; it is an honor to share in the food struggle, the health victory, and listen to every question that any of you have). I would surely get tired of that, too!

The good news is that when you are eating nutritious food made the right way, there should never be a lack of FLAVOR. There is certainly no lack of flavor in this delicious Zucchini-Stuffed Hot Chicken Salad Recipe! When I made this, my team in the kitchen couldn’t stop eating it, and neither could I! I really hope you enjoy it.

Zucchini-Stuffed Hot Chicken Salad Recipe

Makes 4 servings

Ingredients

  • 2 zucchinis, sliced in half
  • 3 tablespoons chopped pearl cocktail onions
  • 1/2 cup chopped carrots
  • 1/2 cup sliced fresh green beans
  • 1 1/2 cup cubed or shredded cooked chicken
  • 1 garlic clove, grated
  • 1/2 teaspoon kosher salt
  • 1/3 cup mayonnaise
  • 4 tablespoons finely chopped almonds

Directions

  1. Preheat oven to 375 degrees F. Using a spoon, carefully scoop out the middle of each zucchini half, leaving a well to stuff the chicken salad into.
  2. In a bowl, mix onions, carrots, green beans, chicken, garlic, salt, and the mayonnaise, folding until ingredients are well-combined.
  3. Divide the chicken salad among each zucchini, mounding it up in the middle. Sprinkle the top of each zucchini with crushed almonds.
  4. Bake for 35 minutes. Remove, let cool and enjoy!
