Good mornin y'all.

it was a decent weekend. We've had a lot of rain and severe weather lately. It's better than drought but tornados and softball sized hail I could live without. We have lucked out here but the town 15 miles to the south of us has been nailed by hail. Lots of damage.

we shampooed part of the living room carpet yesterday. I shouldn't have done it as I am paying for it with pain. I am miserable. No rest for the wicked though. I have to get my b12 shot today. Other than that I have no idea what's the plan for today. I'm hoping we'll be getting the couch this week. If not we'll be calling about it. Saturday marks 6 weeks. eager to get it!

QOTD: boy do I. An aunt my late uncles wife and their two kids(my cousins). I cut them out of my life as they are toxic. My aunt is a racist piece of crap. Uses the n word regularly. Stole over a million bucks from my great grandmother. Just a piece of work. The others are toxic af. They suggested we kept money from them when my grandma died. It's a mess. So many toxic people in my family.

Good morning, everyone!

Winter lasts so long, but it feels like Spring just flew by. The first day of summer is a week from Friday.

We had a good weekend, 10-K on Saturday and we went out to dinner on Sunday. Marilyn and my youngest are driving one of her cars down to Florida, starting on Sunday, so we decided to do an early Father's Day celebration yesterday. I got Jambalaya and had some Crème Brûlée for dessert.

Today I am in the office and have my swimming class this afternoon. It's kind of a pain driving from the city to my house and then from my house to swimming. But I can't get my wetsuit zipped on my own.

QOTD: We are pretty far from our families, so I would actually like to see them a bit more. But not too much.

Breakfast: bagel

Lunch: catered

Dinner: Jambalaya

A Thai or Laos restaurant usually has Hot Pots where you can get a broth with just proteins and veggies no noodles or sauces. There is a new one that opened a couple of towns over from me that I want to try.

Good Monday morning gang. Here's to the start of another week to tackle things. We have two new hires today that I have to onboard which isn't all that bad, but it's nice when I only have to do one at time since I only have one training computer, but I'll figure something out. Saturday I did a bunch more planting while Irvin went with one of this granddaughters and grandsons to a NASCAR go-cart class that the two of them will be joining and Irvin was asked if he wanted to be part of the pit crew. Yea that was an exciting time for him. He also went back yesterday to watch some of the racing so the kids could understand what was going on.

Late yesterday was one of my nephews wedding in South Kingstown. I picked my daughter up and we got there at 4:30 1/2 hour before it started. I stayed until 8:30 as I had to be up early this morning. The wedding was nice, but I got stuck sitting between my stepfather and oldest sister both of whom I can't stand being near. It took everything in my power not to stab them both. They kept reaching back and forth in front of me because he was showing her his trailer in Maine and how much work he's done to it. I had asked her if she wanted to switch seats, but she was "no why do I want to sit next to Paul". Um I don't know because you're stuck up his ass and always defends him over your own mother. Anyways I was smart and didn't drink anything bu****er.

QOTD: Do you have a family member or members that you could go the rest of your life without ever seeing them again? Yes I have two as noted above.

It can be so so tricky. The Thai place we go to frequently finally has a rice free dish that isn't deep fried and loaded with sugar. They called it an Atkins bowl. Basically chicken, beef and shrimp stir fried with a ton of veggies. The sauce wasn't sweet or thick.

You can call ahead to ask them about the cornstarch. They may be able to suggest something suitable for your needs. It never hurts to ask.

Thank you! They are Highland cows. They had babies, but they are not in that picture. That is in Southwest Wisconsin, kind of near Trish.

That's wonderful! I'd forgotten about using them for saute...this year that might be something I actually use now that I'm finally eating healthier. Thank you!

Yeah, I'm afraid any sauce will have cornstarch so I'll just have to go really low on the carbs I can count that day if they won't agree to leave the sauce off. Thank you for the good suggestions.

Shrimp with vegetables or broccoli or beef with broccoli might be good choices. But they might thicken their sauce with cornstarch. It can be hard when your diet is that restricted.
