I do it on a George Foreman grill.  Be careful not to overcook it and it will come out nice and moist.

I had the same dilemma with the whole fish thing as I was not much of a fish eater before surgery.  I put the salmon fillet in a oven proof glass dish and put a little of the teriyaki or lemon pepper marinade (there is only like 2 gr. of sugar in a whole serving).  I cover it tight with foil and bake it for about 20 minutes on 350.  It is really tender.  The thing you have to remember is that the fish cooks way faster than chicken or beef so when it flakes it is done.

I use the George Foreman grill or broil

I do not eat fish but my husband is a seafood freak and I am the cook in the house, so here is how I do Salmon. I lightly spray a cookie sheet or shallow pan, then I squeeze the juice from a lemon over the pan that I have sprayed. I place the salmon on the pan and then add salt and season to taste. then put a few more drops of lemon juice ontop of the salmon...PUT IT IN THE BROILER FOR ABOUT 7 to 10 minutes...Make sure your broiler is hot first,,,,Just incase you don't know the broiler is the bottom part of your stove and you set the dial to broil...Only telling ya because I gave someone a broil recipe before and they were clueless to what a broiler was...
The salmon is done when it is flaky but still a bit moist....He loves it this way..

Hope it Helps....

April

PS: try broiling some eggplants with a pinch of dry parmeasan cheese and a dollop of tomatoe sauce on it too....YUMMMMY !

I've always poached my salmon fillets.  Use a big skillet, cover the bottom with a little Pam spray. or olive oil.  Fill it about halfway up with dry white wine and water, (or jus****er), add a little thyme, salt, pepper and whatever else you like.  Slice a lemon and drop two or three slices in the water, too.  Put the salmon in the simmering liquid, skin side up; cover and simmer until flaky.  Serve with more fresh lemon for drizzling over the top.

sprinkle with Old Bay Seasoning and broil for 8 minutes.  NO longer - or it will become jerky.  Use salmon that is at least 1 inch thick.  Good luck.  This is one of my favorite always goes down well and tastes super yummy and it way easy to make dinners!
