You might recall my recent mention of an a ridiculously awesome tasting (but unfortunately too high in fat, etc) Liberte Coconut Yogurt that I found when I was in Wiarton on vacation...

Being the brilliant yet slightly less-than-humble genius that I am (haha!) I have recreated a lower-fat higher protein version of this delectable treat....

Take a tub of 0% Plain Greek Yogurt,
add about 1/3 cup of toasted unsweetened coconut,
add about 1/3 cup of DaVinci Sugar Free Coconut flavoured syrup
and 2 Tbsp of Splenda... Mix and enjoy with fresh fruit...

Friggin' awesome!

I mentioned this recipe in my blogpost today...titled "Could've been a Carnie", where I explain how I am glad I didn't have this WLS 10 years ago, because I wouldn't have been ready... and I could've ended up like another Carnie Wilson...although, not quite like Carnie... 'cause I sure wouldn't have broadcast my surgery live on the internet, and I sure wouldn't have posed in playboy either....

Hey Toni....great detective work!  I too tasted Liberte Chery yogurt that was absolutely divine.  When I did the nutritional read I was shocked.  I have written your recipe out and just a question:  where did you purchase the DaVinci Sugar Free Coconut syrup?

Thanks,
Nancy

Sounds good!  How sweet is the coconut syrup on its own? Do you use it in anything else?
