Topic: My Wish List

My WLS has me cooking, and cooking, and cooking more.  I find that I now lust for certain items to help me in preparation of all the wonderful recipes and other food...and storage of the spices/additives.  My list is:

  1. Spiralizer...got it!
  2. Family size George Foreman w/removable grill plates...got it!  I even went a bit farther, got the Evolve.
  3. Food dehydrator
  4. Foodsaver.  I think I have a Seal-a-Meal stored somewhere, I just don't know where or if I can still buy bags for the 40 year old dinasaur.
  5. Door mounted spice/food rack.  I found one that will also accommodate my Torani syrups.  I have acquired so many more spices and herbs since my surgery, that my cabinet is full...got it!
  6. Small size chest deep freezer...got it!

I have the Paderno one that someone posted above and it's great, but this one seems much better. The blades are all integrated and apparently it sticks way better. The blogger who has the Inspiralized cookbook/blog created it. I'm waiting for mine to break so I can justify purchasing this!

Topic: Non Meat Recipes (Fish okay!)

Hey Y'ALL!

 

I am 11 months post op and I have definitely feeling a difference in restriction and hunger for the past 2 months. I often feel hungry and I don't stay full feeling for as long as I used to.

In the past, I did not eat meat, other than fish and shellfish, but because I have been stuck at a stall and have caught myself slipping here and there,I started eating meat again in hopes of protein-dense meat = staying full longer. I don't think it has helped and now I am looking for new things to eat. 

Any good ideas? I like fish and shrimp. I am so afraid that I am on a slippery slope and it's too soon to be having these thoughts

I tried this recipe yesterday.  Its really easy and it turned out great.

4-Ingredient Slow Cooker Salsa Verde Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts cut in 2 or 3 pieces

  • 1 jar trader joes salsa verde

  • 1/2  bottle beer*

  • 1.5 teaspoons cumin

  • salt and black pepper

  • (optional: 1 jalapeno, stem removed and diced, leaving the seeds in for extra heat if desired)

Directions:

  1. Add chicken to the slow cooker. Top with salsa verde and beer, and sprinkle with cumin and season with a few generous pinches of salt and a pinch of pepper. Use a pair of tons or a spoon to turn the chicken so that both sides are coated. Cover. Cook for 3-4 hours on high heat, or 7-8 hours on low heat.

  2. The chicken is ready when easily shreds with a fork. Shred the chicken in the slow cooker, and toss with the juices. Then remove the chicken with a slotted spoon and serve warm. Or, store the shredded chicken in a sealed container in the refrigerator for up to 5 days, or in the freezer for up to 3 months.

  3. *If you want to make this gluten-free, you can either use gluten-free beer. Or replace the beer with chicken broth.

I just get my jars at the grocery store. Should be near the home goods like plastic wrap, storage bags, foil, that sort of thing. 

There are many different sizes. I use quart jars for storing things like dried beans; pint jars for storing left over soups (I can freeze in them - just be sure to leave the lid off until frozen as liquids expand during freezing); 4 oz jars for portion control. I have also purchased 4 oz jars with lids that have holes in them - great for making your own seasoning blends.
