Shepherds Pie VSG style!!

Topping...Mashed cauliflower with Velveeta cheese and garlic.
Filling... Ground beef, peepers, onions, garlic, and, Franks Hot Sauce.
Outside...Red pepper if you couldn't tell.

I don't know the calorie count...because, I never eat a full serving.

Scrumptious!!!!!

 The topping on sheperds pie should never be bready (is that even a word? Oh well, it is now LOL). Usually its made with mashed potatoes, and should be kind of crispy on top from baking but creamy on the inside. Looks like the cauliflower and velveta works great to accomplish that!

HOLY CRAP!!  This looked so good that I made it tonite and it is amazing.  I had forgotten about mashed cauliflower.  I did 2 red peppers and some meatloaf style that I will cut up and freeze.  i used sharp cheddar and it is great.  During the holidays making this with red and green peppers will make a pretty table.  Thanks again for this delicious and easy meal.
