Oohhh..gonna try these!!

I'll be using some alternatives like cooking spray and/or low fat margarine..chicken or turkey bacon..low fat protein cheese..you know the drill.

I know what you mean with runny yolks. In the pic the end result looks like to yolk is almost cooked all the way. Can try whipping..would change the consistency..would still be good I'm sure. Or can try putting the egg in the microwave for 15-20 sec and then place it in the bacon cupcake to cook the rest of the way.

You can omit the bread and cover the bottom with meat as well. Prosciutto works well!

Yummm..Prosciutto :-) Good option. Going to try these with the slice of bread first. What's nice about this recipe..can make a single cupcake or as many as you'd like..especially if you have a family or company over for breakfast/brunch. I know I will be only able to stomach one..my boyfriend will love these and eat the rest:-)
