Good Morning. Cream cheese blueberry pancakes....here we go

Recipe from I Breathe I'm Hungry...


For four 6-inch pancakes/crepes

  Recipe ingredients:   2 oz cream cheese 2 eggs 1 packet stevia (or any) sweetener 1/2 teaspoon cinnamon

Oh crap! Pan is too hot. Med high to med would be better.

Not bad but double the Truvia.

Much better with SF syrup!  kiss

Bacon sounds good today .... and not just to naughty lil Bacon  the semi-tame under -the -pool deck dwelling  fox .  Its so  interesting how he recognizes ( I HOPE  ! ) lil furry Mini me as a fellow human smelling  pet not to be eaten ... then again Mini me the clawless and largely helpless Persian cat is like a thousand years old so tough stringy meat and super -furry to boot .  

Unfortunately the local feral swan population totally fell victim to Bacon and his mother . 

I keep thinking of  bringing in  a  pair of white pea****s ( they keep foxes in check apparently and even protect a flock of chickens if raised together ) .. to protect the ( prospective so far ) flock of bantam white Silkies and Cochins I hope will de-bug and fertilize our organic mini- farm without scratching the beautiful perennial border out of existence .

Its All  SUCH a delicate balance ... I hope  feeding Bacon dollar burgers from  Burger King  also makes him PROTECT  our land against  other marauding foxes  and scary horrible and way too clever and sadruthless chicken -eating raccoons .....

Always need bacon...

Altho it's gotten way expensive so we switched to sausage.

With bacon sounds like a weird combo (sweet n savory plus I've never been into bacon - I just eat at breakfast sometimes coz I'm not gonna waste protein).

DH has perfected the art of the pancakes (I know and he didn't want me to get this surgery - what a honey).  He cooks the pancake in a teeny one egg frying pan and then to flip it, he very firmly taps it into a crêpe frying pan and cooks the other side that way.  You get them shaped perfectly this way.  Also olive oil works better than butter as the butter tends to burn and go a yucky black.

That does sound good Gina.  I make them sometimes for supper.  I have the sugar free syrup that is pretty good on them.  I need to get some more cream cheese - I used almost all of mine in the cheesecake.

I love bacon, but we are trying to eat the rest of the ham and turkey up right now...

I just tried this, cut the recipe in half and made two...delicious! The texture was kind of like French toast. I loved them!
