Good Morning. Eat your vegetables or not
I guess you guys already know I'm a take-them-or-leave-them kind of gal concerning veggies. And, when I do eat them it usually means I'm getting them in season from the local farmers market. The exception is when I make a huge pot of beefy veggie soup. I love beefy veggie soup. It's really more like a stew once you add the okra. There's also potatoes, celery, baby lima beans, tomatoes, and carrots, and about 2 1/2 pounds of stew beef. Yum!
What are some of your favorite ways to eat your veggies?

I LOVE my veggies. Especially right out of the garden. My favorite is spinach or kale in my eggbeaters every morning with some cheese. I pick the greens and start it steaming (in a no stick pan with pam, and a lid), when it gets wilted or starts browning, I pour in the southwestern eggbeaters, top with cheese and then fini**** like an omlete. Yummmmmm and I am getting a good dose of fiber and iron and vits to start the day.
I also love my brocalli / feta salad. I cook fresh brocalli until just barely wilted, the color change stage, with very thinly sliced onion. Add mayo, salt, pepper, lemon and feta. Best if it can sit for a while and is great at room temp. Also good left over.
Easy califlower. Break up califlower into chunks and steam in about 1/2 inch of water for a whole pot. Most of it won't be in the water. When tender, pour off the water, turn off the stove. Sprinkly the califlower with soy sauce and grated cheese, cover and return to the stove until the cheese melts, enjoy.

My favorite is stir fry for sure, which I haven't been making much lately. Need to change that!
I LOVE veggies...my favorite meal is all veggies. Don't do it too often but many of my favorites are cooked with meat or bacon grease so I don't go off the deep end, LOL.
Favorite is broccoli (and yes, I can eat it with abandon). Would add cheese but now I've gone back to a recipe my Mother created decades ago to get my sister to eat it...she mixed a stick of softened butter with a cup of mayo (I use Duke's), and it's like a poor man's Hollandaise sauce.

I was looking forward to having cauliflower cheese, but they weren't able to deliver it with my groceries (it was on special offer and they must've run out). It probably would've given me gas so maybe that was a good thing.

I LOVE beets - but I don't have them very often. I also like spinach, cooked with some vinegar, asparagus, broccoli, green beans, pretty much anything... I enjoy snacking on raw celery and carrots. Not always have to dip them either.
I need to start bringing veggies to work to eat for snacks. The past 2 weeks have been BRUTAL with eating - and boy, can I feel it. The scale hasn't caught up yet, but I'm sure it will...

My mom made me homemade mac & cheese almost every day of my childhood. I love it(wonder why I had a weight problem).
Well, can't eat that much now, but I do fix cauliflower & cheese. I boil the cauliflower until tender, drain the water off add a little salt. Put in a dish, layered with cheese(whatever kind you eat). In a dish beat up an egg or two with milk, pour this mixture over the cauliflower & cheese bake at 350 until it sets. I love it!! I use Hood Calorie Count Down Milk which has very few carbs. You can add some butter(or I Can't Believe It's Butter) if you want to.
