Hello to all of our Lightweights!!!  If you are visiting WELCOME....PLEASE JOIN US and POST!!!!!    Besides my tool,  I count  Posting on the LW board as my #1 reason for being successful on this exciting journey!!!!     

WARNING TO SELF AND TO ANYONE WHO WILL LISTEN!!!   AVOID 'BAD' CARBS AT ALL COSTS!!!  THEY ARE ADDICTING!!  THEY WILL SLOW DOWN YOUR WEIGHT LOSS DURING THE LOSING STAGE (and you won't even notice)!!  THEY WILL MAKE THE SCALE GO UP AFTER THE HONEYMOON PERIOD IS OVER.

Success in Maintenance starts with good choices during the Honeymoon Period!!!!!

Pulled  pork for all 3 meals plus a slice of cheese and my protein drinks. 27 carbs 99 protein. No candy so far today ! Yaaay!

No pigs only cattle. Get the pork from a family friend. We had elk steaks the other night , mmmm mmmm. Happy New Year !

Hey Roz, have a wonderful 2013 too!!  I feel the need to experiment making cheesecake tomorrow.  I like the look of this one http://www.ibreatheimhungry.com/2012/11/low-carb-gluten-free -pumpkin-cheesecake.html although I think I'll skip making the crust (I'm scared of coconut - it gives me gas, this is a problem I had as a pre-op... most of my issues are pre-op ones). ;-)

Here you go:

 

Pumpkin Cheesecake Pie

Serves 8

½ recipe for Basic Pie Crust (see below)
8 oz cream cheese, softened
¾ cup granulated sugar substitute
1 tsp cinnamon
½ tsp ground cloves
½ tsp ground ginger
½ tsp ground nutmeg
½ tsp salt
3 eggs
2 cups pureed pumpkin
1 tsp vanilla extract

Roll out the dough and place in a pie plate. Crimp edges as desired. In a large bowl, blend the cream cheese until  fluffy.  Combine the sweetener and spices together in a small bowl and mix well. Gradually add the sweetener and spice mixture to the cream cheese and beat until fluffy. Add the eggs one at a time, beating well after each. Add the pumpkin and vanilla extract and blend until fully combined. Pour the batter into the prepared shell and bake in a preheated 350 degree (F) oven for 40 minutes. Chill before serving. Garnish with whipped cream if desired.



Approximate nutrition information per serving: 284 calories, 23g fat, 6g net carbs, 8g protein

 


Basic Pie Crust

Makes two 9 - inch crusts

6 Tbl cream cheese, softened
6 Tbl butter
1 ¼ cup milled flax meal
¾ cup coconut flour
¼ tsp salt
2 Tbl granulated sugar substitute
4 Tbl cold water

Combine the butter and cream cheese together until smooth. Stir in the flax, coconut flour, salt and sweetener, mixing to combine. Add the cold water and mix until a stiff dough forms. Divide into two equal balls – each will make one 9 inch crust.

S:  Lemon Tea Protein Drink
L:  1/2 Chicken Parmesean Bundle
S:  Lemon Tea Protein Drink
D:  Collards w/ ham chopped up in them
S:  Either: Decaf Coffee or maybe a Chocolate Truffle Protein Drink made with Greek Yogurt - I read this on a board and it looked good, but would need modifying as they used a lot of peanut butter - I might use some but not as much as they had.

Vitamins:  Done
Water/Fluids:  105 ozs
Miles:  Still NONE!!
