WARNING TO SELF AND TO ANYONE WHO WILL LISTEN!!! AVOID 'BAD' CARBS AT ALL COSTS!!! THEY ARE ADDICTING!! THEY WILL SLOW DOWN YOUR WEIGHT LOSS DURING THE LOSING STAGE (and you won't even notice)!! THEY WILL MAKE THE SCALE GO UP AFTER THE HONEYMOON PERIOD IS OVER.

Sunday....YEAH the weekend is almost over....haha! Are you watching the big Super Bowl game tonight? Pittsburgh's not in so we aren't having a big get together but I think a few of our kids and grandkids will be here. I'll probably go to bed early and hear who won in the morning.

I probably would have watched if the Falcons were in it even though I didn'****ch them play all year!! I doubt I will watch any of it.

The muffin sounds good. I like using almond flour, but haven't got into it much yet.

They are really good. I used I Can't Believe Its Not Butter instead of real butter and used Almond Flour instead of Coconut flour. They are really good.
Here is another one, if you use Carbquik.
Cinnamon Cream Cheese Rolls
Here is a variation on the Tova's recipe..
1/2 cup butter - I used I Can't Believe It's Not Butter
8 Tbs. sugar free maple syrup - I used regular sugar free syrup
chopped pecans- left these out
Ground cinnamon
2 Cups Carbquik
4 ounces cream cheese, softened
4 Tbs. Splenda
1/3 applesauce, unsweetened
1/3 cup half and half - I used Heavy Cream
Preheat oven to 425. Place 2 teaspoons butter, 2 tsp. sugar free
maple syrup and a Tbs. of chopped pecans in each of 12 muffin
cups..sprayed with Pam. Then sprinkle with cinnamon.
In a bowl, mix softened cream cheese, splenda, Carbquik,
applesauce, and half and half until like biscuit dough. Add a touch
of water if it's too stiff.
Place the muffin tin in the oven to melt the butter, etc..Then plop
the dough over the mixture..Bake 10 minutes..
Invert on a heat-proof serving place..
These were good too. They needed a little more splenda and more cinnamon to my taste. DH ate several of them and said they were ok for him - he usually doesn't eat much of the new stuff I try!!
