Menus and Miles Sunday Feb. 3rd
Thanks Linda. Do you find that almond works fine in place of coconut flour? I know I can't have desiccated coconut due to the preservative on it and am pretty sure the flour would have equally bad effects on me (gas, etc). That'd open up a whole world of recipes.

The Almond works in most recipes where it calls for flour or coconut flour. It may fall apart a little more and is a little more moist. It doesn't give me gas, if I eat too many carbs I get it really bad too even though I had RNY.
Have you looked into the Carbquik? I don't know what type of preservatives it has, but I use it alot. It kind of has a bitter taste at first, but you get used to it after a while.
Sorry for not responding sooner - I read your response on a slow phone and didn't get to Googling this 'til now. I'd not heard of Carbquik and it appears it's not available in the UK. I'll keep my eyes open for it just in case though. Thanks.

I glanced at the game a couple of times. Our SIL's were rooting for different teams so I could tell who was winning. I was just enjoying my DD's and grandkids. The new baby is starting to look around, Raegan was playing mother hen to her new brother, Houston was being his teasing little self which caused a lot of squealing and Phoenix started walking this week so it was a fun evening.
Menus sounds good!

I have a stuffed duck on my wall but I don't think I've ever eaten any.
I'm going to have to make some of those pancakes you make them sound so good.
