Fall Goodness (Recipe)

I just re-engineered a recipe I used to do all the time for Pumpkin Butter that you might like.

 

1 29 oz can of pumpkin (NOT Pumpkin Pie Filling or Pumpkin Pie Mix)

1 Cup Splenda (or other no calorie sweetener of choice)

1 1/4 cup Torani Brown Sugar Cinnamon syrup

2 tsp Vanilla

2 tsp ginger

2 tsp nutmeg (Fresh ground)

1 tsp Allspice

 

Combine all ingredients in a saucepan and bring to a boil.  Reduce heat to low and cook for 45 minutes.  Stir occasionally.

Once this is done you can serve immediately, or refrigerate and store.

This is really good when mixed with your greek yogurt!  If you are in maintenance and can have fruit, mix with greek yogurt and add some sliced banana.

sounds good, I can almost smell it.

I also make a crustless pumpkin pie that is 50 calories a piece.

1 can of real pumpkin
3 egg whites
cinnamon/ginger/nutmeg/cloves (to taste)
1 cup of splenda

spray pie plate with pam and back in oven at 350 until knife comes out clean when inserted into pie.
My son loves this one; he is a body builder and does not eat breads period.

OMG, sounds SO good and I have tons of pumpkin that I canned last year that I have been wondering what to do with! This will be perfect.

Now I am thinking about making no sugar apple butter, I wonder how it would come out, gonna have to make a small batch and see!

The apple butter from walden farms is just nasty.

I canned 24 quarts of apple sauce last week, I don't add anything to it at all so it makes a great base for so many things! I do my apple butter in the crock pot, so simple, just dump everything in prop the lid and let it cook, I don't imagin using splenda instead of sugar would change anything, but I don't want to do a huge batch of it and have it be gross. If I try it before you do I will let you know how it comes out!
