Jimmo's Mini Mexican Meatloaves

Here is what I tried.

1 lb ground beef
1 lb ground pork
1 taco mix packet (I think I need at least 1/2 more packet)
2 eggs
1/2 cup rough diced mushrooms
1/2 cup rough diced onion
1 rough diced tomato
1/4 cup diced Garlic
1/2 jar of Salsa (I used Newmans Own Mango Salsa) Some of a certain WETEO's Home canned Salsa would be great!
I might dice fine one Jalapeno next time

Preheat Oven to 375

Mix the pork and beef

Mix in taco packet and 2 eggs

Add chopped Mushrooms, Onions, Garlic and Tomato and mix

Add the salsa and mix

I did all the mixing by hand

Put 4 oz prtions in Mini Loaf Pans and or Muffin Pans

Cook for 15 to 20 minutes or until inner temp is 160 degrees

It made 10 approx. 3.5 oz Mini Loaves.
