Veggie Lover’s Cabbage Soup Recipe

Makes 8 Servings

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 large carrots diced
  • 2 stalks celery diced
  • 1 medium zucchini diced
  • ½ head cabbage chopped
  • 1 cup kale chopped
  • 1 14.5 ounces can diced tomatoes
  • 4 cups chicken broth if you want it more brothy you can add more broth

Seasonings

  • 1 tablespoon salt
  • black pepper to taste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ¼ cup chopped parsley

Directions

  1. Chop onions, carrots, celery and zucchini. Sautee in a pot with vegetable oilfor 4 to 5 minutes.
  2. Add the garlic and seasonings and stir for another minute.
  3. Add the cabbage and kale and cook until it starts to wilt.
  4. Add broth and tomatoes and let it cook uncovered for 10 minutes.
