Pico de Gallo Grilled Chicken-30g Protein!

Pico de Gallo Grilled Chicken-30g Protein: Labor Day weekend is right around the corner….which means we can see friends and family and take a deep breath with some time off. There isn’t a holiday I don’t like, but the holidays that don’t actually consist of much have a special place in my heart.

Labor Day also means getting back to the grill. This is a wonderful grilled chicken recipe that has a bit of Mexican flare. It’s light and fresh and delicious! Pair it with grilled bell peppers and onions and some black beans. It’s simple and fast…I’m going to title it one of my Healthy in a Hurry meals. A delicious protein packed recipe you are sure to enjoy!

Pico de Gallo Grilled Chicken

Servings: 4

Ingredients

  • 1 lb boneless, skinless chicken breast tenderloins
  • 1/8 cup cilantro
  • 2 limes
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 4 roma tomatoes, seeded and diced
  • 1/2 cup onion, diced
  • 1 jalapeno pepper, diced
  • 1 clove garlic, minced or pressed

Directions

  1. In a shallow dish combine 1 cup chopped cilantro, juice of 1 lime and 1 tsp salt. Add chicken and marinade 15 minutes.
  2. Meanwhile dice tomatoes, onions, garlic, 1/8 cup cilantro and jalapeño pepper. Mix. Add salt and pepper to taste. Add lime juice and toss.
  3. Grill chicken (or on stovetop) and let rest a few minutes. Then top with pico mixture.
