15 Weeks Surgiversary!

Today (5/19) is my 15 weeks post-op surgiversary. I weigh 305 & I'm down 101 Lbs since my pre-op diet started last Nov 2010. I no longer use a CPAP machine, my BP and Cholesterol are excellent, I'm nearly off all my meds now (5 more Lbs to go!), My back and knee feel better than they have in years, & I can actually run again!

Mmmmm, Egg Salad with a Twist!

Now that I'm well healed I've started introducing more solid foods into my diet. This week it was hard boiled eggs. I tried eating them plain for a couple days just to see if I was ready for them and I was! So the next step was to make an actual meal out of them instead of just eating them as a snack. So I mixed up some of my favorite sandwich type food. It's egg salad with a twist. I add in some imitation crab chunks along with low fat mayo. It's easy!

2 Large Hard Boiled Eggs
1/2 Cup of  Imitation Crab or Lobster chunks
1-2 Tbl spoons of Low-fat Mayo

Peel the eggs and rinse with cold water to make sure you have all the shell cleaned off,
Place them in a small bowl,
Add the other ingredients,
Smash it all together with a potato masher
Cover and refrigerate for 1/2 hour before eating to allow the flavors to meld together

I eat mine either on a small bed of fresh spinach, or on an Oroweat Sandwich Thin (whole wheat). It's very tasty!

Mini-Goal Accomplished - 305 Today!

I went to see Dr Fang today for another of my post-op follow-ups. I weighed in at 305. I'm now officially 101 Lbs lighter than I was during my 1st pre-op appointment. That was nearly 1 year ago today. Dr Fang was impressed with my continued weight loss, but he wants me to start pumping iron!
I'm happy, I'm healthy, I love my VSG!.... Craig

12 Weeks & 56 Lbs Gone!

Yesterday (5/5/11) was my 12 week post-op surgiversary. As of now I'm 56 Lbs smaller than I was when they wheeled me into surgery.

It was a hardcore week of back to basics dieting but it paid off!

2 Quick & Easy Dairy Meals

I eat these several times a week for quick and easy dairy meals:

Meal #1:
1/3 Cup Low-fat Ricotta Cheese
1/3 Cup No-Sugar Added Applesauce

Meal #2
1/3 Cup Low-fat Cottage Cheese
1/3 Cup Low-fat Yoplait Yogurt (I like the orange or the blueberry)

They fill me up and they taste very good too!

Pretty Simple & Tasty Breakfast Recipe

For those who are missing their comfort food (me too, sometimes), here's a pretty simple & tasty breakfast recipe I use about once a week:

1 Tbs Olive Oil (cooking spray is ok too)
3 Turkey Sausages (Banquet)
1/3 Cup of Egg Beaters
1/3 Cup Shredded 3 Cheese Blend
1-2 Tbs of Mild Salsa

Defrost the sausages in the microwave for 2 minutes
Cut them into narrow pieces on the bias (angular)
In a small non-stick pan set to med-high heat, add oil and sausage pieces
Saute for about 2-3 minutes with frequent stirring
Add egg beaters and continue to stir (may need to reduce heat a bit too)
When it's about 90% cooked (no more runny stuff) add the cheese and continue to stir

Put into a small bowl and top with the salsa. This is actually enough to feed me with a few bites of leftovers, or just enough to share with my 2 year old.

Stall Broken, Finally Over the Hill!

After about 10 days of yo-yoing up and down the same 3 lbs, today my stall finally broke & I'm down 2 Lbs! To top it off, I now have less to lose than I have already lost, FINALLY over the hill!

A1C Results - More Great News!

Received the results back for my A1C test today. Pre-VSG I was an alarming 6.7, as of yesterday "5.3"!!!
I'm no longer considered pre-diabetic, I'm now NORMAL!!! ...Craig
